Nerds Gotta Eat :Protein Pancakes

So we’ve been trying to be healthier, here at Fangirl HQ, but that doesn’t mean we don’t have the same sweet teeth thatwe’ve always had.  What better way to cure it, than with pancakes?

Now, I know that pancakes aren’t the healthiest option ever, but I found a way to make them a little healthier, but still taste awesome!  Here’s what you need:

2 c unleavened flour
2 tsp baking soda
1/4 tsp salt
2 large eggs
2/3 c granulated sugar
1 stick butter melted
2 1/2 c milk with a little lemon juice
A scoop of protein powder

Combine the flour, baking soda, salt, and protein powder.  Mix them.  In another bowl, whisk eggs and sugar together.  Slowly mix the milk into the wet mixture.  Combine the two mixtures, and whisk briefly.

Then you just pour the batter onto a heated skillet, and make some pancakes!  Its a simple recipe, and it made 12 (large) pancakes.  Since they were so chock full of protein powder, they were filling.  When you end up with excess pancakes, you can freeze the extras for another day.  If you make a bunch one afternoon, you can have breakfast ready for a week or more.

Since I’m lazy in the mornings, this was perfect with me.  I also added banana slices to a couple pancakes to see how that was.  It was fantastic.  So if you’re unopposed and not allergic to bananas, add them!

photo (2)They may look weird, but they were fantastic!  They fed Natalia and I for awhile.  But what I really want to talk about is protein powder.  It’s a great thing, especially for vegetarians who don’t get enough protein.  It both fills you up and adds something healthy to your food.  It can be put into smoothies, milk, and almost anything else.  My favorite flavor is chocolate, because it adds just a tiny hint of flavor.
