Nerds Gotta Eat: Jeff Blim Brownies

Alright Fangirls, its story time.  When Natalie and I went to the Jim and The Povolos minotaur NYC show, we brought cookies for everyone.  But we made one big one for Jim Povolo because in my mind, he is the most majestic and perfect of all human beings.  But as we were waiting to meet him, with our little brown bag of tasty cookie, Jeff Blim asked us if it was brownies.  He then said that if it is brownies, he is going to steal it from Jim Povolo and eat it himself.  So in the spirit of Fangirling and Starkids, we made him some brownies!

So here’s the recipe (by the way, it’s vegan!):

1/2 Cup Non-dairy Butter
3/4 Cup Sugar
1/2 Cup Applesauce
1 Tsp Vanilla Extract
3/4 Tsp Baking Powder
1/4 Tsp Sea Salt
1/2 Cup Cocoa Powder
3/4 Cup Flour

So, preheat your oven to 350*F and spray a muffin tin with non-stick spray.  We used a baby muffin tin because that shit’s cute.

Melt the butter in the microwave.  Stir in the applesauce, sugar, vanilla, baking powder, salt, and cocoa powder.  Whisk it up!  Then slowly whisk in the flour.

Scoop batter into your muffin cups, so that they’re 3/4 full.  We used a melon baller because that’s far easier than spoons.  Bake them for 22-26 minutes if they’re big muffins, 14-18 minutes if they’re babies.  Or, you can watch them and see when they start to pull away from the sides.

Leave in the tin for about 5 minutes, then put them on a cooling rack.  And voila!  You’ve got some damn cute brownies for Jeff Blim!

We made 2 batches, so we could taste test both of them and choose the best for Mr. Blim.  The result was tasty.  Try it out, Fangirls!
