Nerds Gotta Eat: Shulkie Salad

photo 3 (8)I created this edamame salad not too long ago, Fangirls. And because of it’s lean, green, fast & hearty properties, it was only right that it be named after our favorite gamma-gal, She-Hulk.

This salad is seriously the easiest thing ever. You could probably make five of them in the time it took you to read one Shulk comic. It’s one of my go to meals to make for work or at home, and I will always eat it. It’s one of those delicious little things that I will never get sick of eating. So naturally, I must share it with you.

To make one serving, you’ll need:
photo 1 (9)1/2 cup of edamame
1 avocado
About 10 cherry tomatoes
Juice of 1/2-1 lime
1 teaspoon spike seasoning

I use frozen edamame beans, so first let that defrost. Do that by letting it sit out for a while or pop it in the microwave for a little bit to unfreeze those bad boys. Once that’s done, drizzle them with a little olive oil. Then, cut your avocado into cubes, and halve the cherry tomatoes.
photo 2 (9)To make the dressing, juice one half of a lime, or the whole thing if you so wish. To that, add about 1 teaspoon (I usually sprinkle in a little more) of the spike seasoning. I found this all purpose seasoning online a long time ago, and it’s perfect for quick flavor. Like every flavor. Because it uses a little bit of a whole lot of different herbs & spices. Luckily, they’re things that most people usually have on hand. Anyways, add that to the lime juice at mix it together.

To your bowl of edamame, add the avocado & tomatoes. On top of that, add the dressing. Stir it together to combine everything nice & lovely, and that’s it Fangirls. A extra tasty salad faster than you can say Fantastic 3 (8)I like to think that a mod, fit, helluva woman like Jennifer Walters would love this salad. And who doesn’t want to be a little bit more like her? I sure do. So eat up, Fangirls!
