Cookie Cats are one of my favorite things about Steven Universe (and also Jasper). They look so tasty, so I just had to make some for myself! Though in the show they look like chocolate neapolitan ice cream bars, my boy is allergic to chocolate, so I decided that gingerbread ice cream sandwiches was a way to go, where we could both enjoy them! I ordered myself a cookie cutter from Makeasaurus on etsy, and the day after I got it, I whipped up some gingerbread!
For the gingerbread, you’ll need:
1/2 cup butter (softened)
1/2 cup vegetable shortening
3/4 cup light brown sugar (packed tight!)
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ground ginger
1/2 teaspoon ground allspice
3/4 teaspoon salt
2 tablespoons molasses
3 cups flour
First, you’re going to mix the butter, vegetable shortening, brown sugar, sugar, baking powder, cinnamon, ground ginger, ground allspice, and salt. Mix it up until it’s as smooth as possible. Keep scooping it down from the sides of your mixer, to make sure it’s getting as fully mixed as possible.
Add in your egg, and the molasses. I ended up with a little more than the recommended 2 tablespoons, in there, but it’s okay.
Again, make sure your mixing all of the mixture. After it’s looking a bit darker, pour in 1 1/2 cups of flour, and mix it some more. You’ll have to start with a low speed, otherwise your flour will go everywhere (speaking from experience, Fangirls). Once it’s fully mixed, add in the other 1 1/2 cup, so you have the full 3 cups in the mixture. And mix it more. You want to make sure that there are no chunks in there; mix it until it’s totally mixed and smooth.
After it’s fully mixed, take half of it out and mush it into a little flat brick. Put that on a small sheet of freezer or wax paper. Do the same with the other half, wrap them both up in cling wrap (or in a bag), and chill it in the fridge for at least 4 hours. I left mine in for over 24, and that’s okay too.
Once it has chilled, preheat your oven to 350* F. While that’s heating up, either roll out a sheet of parchment/freezer paper, or lightly flour a clean table. Roll one of the chilled bricks of dough flat, as evenly as possible (1/8″ – 1/4″ thick). Flour your cookie cutter, and cut out the dough. As they’re cut, put them onto a cookie sheet, leaving space for them to grow (a couple inches, at least).
Bake them until they’ve puffed up a bit, and are a light, golden brown on the edges. Some of mine got a bit too dark, but they’re still tasty with milk and ice cream!
I had mine with some vanilla bean ice cream, and that was tasty, but I never actually made it into ice cream sandwiches. I’m sure that would be tasty, but I wasn’t feeling it. Dipping them in milk was amazing, though, and definitely a wonderful way to end a day full of fighting off homeward gems.
