Hey Fangirls! What better way is there to celebrate 3.14, pi day, than with pie?! I’ve always been a big fan of pie; I love that it can be sweeter and lighter than cake. I also love pie crust, and I’m getting better at making it too! On Pi Day this week, my mum and I made a pie together; it was some seriously cute stuff. We decided on a mixed berry pie, as gooseberries are impossible to find (I have literally been trying for at least 2 years to bake a gooseberry pie so that I can feel the full Snow White experience, but so far, no luck).
Baking a pie is significantly easier than I expected, and that was wonderful. I used:
1 1/4 cups flour
1/2 teaspoon salt
1/3 cup shortening
4 tablespoons cold water
Start by putting a cup of water in your fridge. You want it to be cold as heck when you add it, but I don’t really know why. Mix your flour and salt, then drop in your shortening. Cut it in with 2 knives, like you’re cutting up food but don’t have a fork. It’s weird and it’s rough on your arms (you go relatively quickly). Once it starts to look like its all clumping, add the water, 1 tablespoon at a time, mixing with a fork in between each. The number of tablespoons will change; we needed all 4 on this day, but you may need less. Once it starts to genuinely look like it’s going to be a crust, lump it together, put it on wax paper, and roll it out. When it’s big enough, put it in your pie plate.
While I made the crust, my mum made the filling. She used:
(about) 3 cups Frozen Mixed Fruit
(about) 2 1/2 cups water
1/3 cup sugar
2-3 drops almond extract.
She put the mixed fruit, water, and sugar in a pan on low heat until it boiled, then brought it down to a simmer. That helps the filling become more solid, but still has some liquidity to it. Once the crust was ready, she added the almond extract, stirred, and poured it into the crust.
After that, we baked it for 20 minutes with a crust protector on, at 350*. We removed the crust protector at the 20 minute mark, then continued to bake for another 20 minutes. After taking it out of the oven, we let it cool for an hour before having it with some whipped cream (whip heavy cream and sugar until it’s the right consistency).
If you Fangirls have any other pie suggestions for me, I’m ready to hear them. Pie is pretty low calorie (more so than ice cream), and since I’m working to lose some weight, having sweets that don’t take up my entire caloric intake for the day is very helpful. Plus it’s fun to make!
