Fangirls, this recipe is from the same book as my Waffles, but when I saw it, I immediately thought, wow, that’s the fanciest grilled cheese I’ve ever seen. I’m gunna make it, and so I did! it looks like some Grade A artisanal nonsense, but it is the most delicious grilled cheese I have ever made, and well worth the weird looks for combining ingredients that don’t look like they belong together.
To make the most fancy of grilled cheeses, you’ll need:
4oz package of Goat Cheese
2 tablespoons Honey
Grated Rind of half a Lemon
8 slices Cinnamon Raisin Bread
Liberal amounts of Fig Preserves
The first thing you have to do is grate your lemon. I grated it directly into my goat cheese, which I had already smashed up a bit. Add your honey to the cheese and lemon rind, and mix it really well. I found that more people liked it when it was mixed better; it made the cheese have less of a bite, and an incredibly sweet taste.
After you’ve mixed those ingredients, spread them on 4 of your slices of cinnamon raisin bread. I didn’t realize it was cinnamon raisin bread when I first glanced at the recipe, but when I saw it I definitely questioned it. But do it, I promise you’ll be into it.
Once the goat cheese mixture is spread on the bread, spread some fig preserve on top. Then you’ll put your other slice of bread on top, and get to grilling! I used a George Foreman Grill on my sandwiches because they grill both sides at once, but if you don’t have one, that’s okay! You can use a non-stick pan to “grill” each side individually.
Ta-Da! You have made the fanciest grilled cheese ever, and now you can impress all of your acquaintances with your incredible grilled cheese knowledge. It really does seem like the most bizarre of combinations, but this is easily the tastiest grilled cheese I have ever eaten, and it’s honestly not all that bad for you. It makes 4 sandwiches, and if you have one at a time, each serving is about 314 calories, and it’s a filling sandwich.
