Nerds Gotta Eat: Apple Cinnamon Bran Muffins

Alright Fangirls. I know we’ve talked about my struggles with bowel movements before, but whenever I’m even considering a road trip or any type of travel, I worry that it’s going to get worse. So awhile back, when my family went to Florida, I made some super tasty bran muffins for us to eat to keep us from getting backed up. Sitting too long can make it difficult for your body to function properly, so bran is incredibly important. Apples tend to help out quite a bit too, so these muffins were the perfect fix. Bonus: they were delicious.


To make these Apple Cinnamon Bran Muffins, you’ll need:
1/4c vegetable oil
1tbsp glycerin
3/4c applesauce
2 eggs
1/2tsp vanilla extract
1/4c honey
1/4c milk
2 1/3c flour
1 1/4c oat bran
2/3c flaxseed
1tsp baking powder
1/2tsp baking soda
1/2tsp xanthan gum
1tsp cinnamon
1/4tsp allspice
3/4c lightly packed brown sugar
3/4c raisins

First off, preheat your oven to 350*F and line a muffin pan with liners. I usually spray the pan with nonstick spray before putting in the liners, so any muffin that bubbles over won’t stick to the pan.

Next, beat together the vegetable oil, glycerin, applesauce, eggs, vanilla extract, honey, and milk. Separately, mix the remaining ingredients. Add the liquid to the dry, and mix well.


Spoon the mixture into your prepared muffin sheet, and bake in the preheated oven for 20-25 minutes. When baking, the time can be forced to vary due to many different things, so it’s always good to check your goods with a fork or toothpick. If it comes out clean, it’s done. If not, you’d better wait a couple more minutes.


These muffins were a bit doughy, but otherwise phenomenal. I will be making them again soon, as I loved that they tasted good and worked well. Being blocked up on the road is never fun.
