Nerd’s Gotta Eat: Harry Potter Muffins

Alright friends, family, and Fangirls.I absolutely adore these muffins, and it’s definitely not just because they’re from a Harry Potter cookbook. Not only are they beyond tasty, the recipe makes a ton (Who needs 2 dozen blueberry muffins? Me.) and it’s a simple recipe to follow. So lets get to it!



You’ll need:
2c flour
2tsp baking soda
1/4tsp salt
2 large eggs (room temp)
1c granulated sugar
1 stick butter, melted
Grated zest of 1 lemon
1tsp vanilla extract
1c sour cream (room temp)
1 pint blueberries (washed & well drained)

Once you’ve gathered your ingredients, preheat your oven to350*F, spray non-stick spray onto a muffin pan, and flour it lightly so you can get these babies out easily. Then, whisk together your flour, baking soda, and salt. Set them aside.


After that, whisk your eggs until they’re smooth as a unicorn’s bottom. Then add your sugar and get that business light and fluffy (not the dog). Whisk with all the intensity of Mrs Weasley as you drizzle in your melted butter, then add your lemon zest and vanilla. Alternate folding in the flour mixture and the sour cream, beginning and ending with the flour. It will become stiff, and that’s okay. Add your blueberries.


Portion your mixture into the muffin pans, and bake for about 25 minutes, turning the pan halfway through. Voila, you have some tasty, Harry Potter muffins! These bad boys are worth taking any of the Unforgivable Curses for, but I don’t recommend that. I do, however, recommend that you bake the heck outta these, as they’re tasty beyond belief, and I think things taste better when they’re homemade (sorry Winky, this one’s on me).
