Spiced Apple Cider Muffins

Alright Fangirls, I’ve been sitting on this recipe for quite some time, waiting for the best occasion to use it. This week, there are 2 perfect events; small holiday party at work today, and the Super Art Fight Non-Denominational Holiday Spectacular tomorrow night. So last night I made a quick batch, and tonight I’ll be making a double recipe, because these muffins are delicious and I can’t get enough. So let’s dive in!


There is a crumble (or streusel if you’re fancy) on top of these muffins, and for that you’ll need:
4 tsp whole wheat flour
2 tbs brown sugar (I used dark because it’s so rich and delicious)
1/2 tsp ground cinnamon
1 tbs butter, cut into small pieces

To make the streusel, just whisk together everything but the butter, then mix in the butter with your hands. Set that to the side and preheat your oven to 400*F because now it’s time to make some muffins!

For the muffins you’ll need:
1 cup whole wheat flour
1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tbs ground cinnamon
1/2 tsp ground nutmeg
1 egg
1/3 cup packed brown sugar (again used dark because wow)
1/2 cup apple butter
1/3 cup maple syrup
1/3 cup apple cider
1/3 cup vanilla low-fat yogurt
1/4 cup canola oil

Whisk the flours, baking powder, baking soda, salt, cinnamon, and nutmeg in a big bowl until well blended. In a separate, medium sized bowl, whisk together the egg and brown sugar. Add in the apple butter, syrup, cider, yogurt, and oil, and whisk until they’re as smooth as possible. Dig a little well into your dry ingredients, and pour the wet ones into it. Use a rubber spatula from here on out because it makes mixing the ingredients easier.

After it’s all mixed, spoon the batter into muffin cups (that have been sprayed with non-stick spray) until they’re about 3/4 full. Then, sprinkle a healthy amount of the streusel on top, and pop them into your preheated oven for 15 – 25 minutes!


I knew I was going to love these because I love apple things, but oh my goodness, I was still surprised by them. They are tasty as heck, super sweet (thanks maple syrup!), and honestly not that bad for you (in moderation). They also made the apartment smell amazing, which is always a fun plus.
