Fangirls, if you follow my personal accounts anywhere, you know that I am obsessed with Moana. It’s an absolutely gorgeous movie that features a girl who was chosen by the ocean to grab a demigod and save the world. So when it came out on Tuesday, I was inspired to make some cupcakes that were reminiscent of the movie.
I started by checking out which (easily accessible) flavors were from Polynesian Islands. I found that coconut (which is mentioned in the film as a very important part of the island) was a big flavor, but sadly the bf may be allergic to coconut, so that’s out. However, pineapple is big, and is a part of my favorite Disney park treat (Dole Whip, of course), so I went with that.
After my research was done, I found two recipes; one for frosting, and one for vanilla cupcakes. I only added food coloring (blue like the ocean) to the frosting recipe, and I am not a fan of the taste. Here‘s the frosting recipe I used. Like I said, though, that was not my favorite frosting I’ve ever made, but I was in a time crunch.
For the cupcakes, I needed:
1 1/4c flour
1 1/4tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3c blended (to liquid) pineapple; 5-7 cubes pre-blend
1 1/2 tsp vanilla extract
1/2c canola oil
1/2c butter milk (1/2c milk & 1/2tsp lemon juice will get ya there)
After preheating my oven to 350*F, I mixed the dry ingredients (except the sugar), and setting them (in their own bowl) off to the side. Then, I made the buttermilk, and set that aside as well. After that, I blended my pineapple into a nice, pulpy juice. I put that and the egg into my mixer (still separate from the dry ingredients) of about 20 seconds. I added the sugar, mixed for 20 seconds, then the vanilla and oil (beaten for about 30 seconds).
Add about half of the dry ingredient mixture, mix just a little, then add half of the buttermilk and mix. Once it’s just mixed in, add the other halves the same way, and mix briefly. I think the brevity of the mixing helps the fluffiness of the cupcakes.
Once it’s mixed, scrape the sides of the bowl, and fill your cupcake cups about 2/3 of the way up. Pop those bad boys in the oven for 12-14 minutes & voila! Cute, pineapple cupcakes. After they’re totally cool (I waited overnight) you can frost them with your ocean blue frosting, and add pearls & gold sprinkles to make it shiny for Tamatoa!
These don’t taste as strongly of pineapple as I’d like, but they’re still phenomenal cupcakes. Plus they’re Moana themed, so they can’t be bad! This recipe makes about 12-14 cupcakes, and the linked frosting recipe barely frosts them all, so bake accordingly. You’re welcome.
