‘ve been thinking about smoothies a lot, lately. I usually allow myself one bolthouse smoothie a week, but those bad boys are expensive and many are from concentrate (which means I’m getting more water than I’d like from them). So I looked up some healthy smoothies (aka I listened to YouTube tutorials on smoothies for an entire work day), and decided to make my own recipe. I was originally going to call them Lion Lickers because my hope was that they would be pink, but they are brown, so it doesn’t work.
Fangirls, I made falafel last week, and I’m incredibly proud of myself for doing so. It’s not that it was super labor intensive, or wildly difficult, but it was something that I wanted to make, and I got my s together and made it! It’s a very fulfilling feeling. I don’t know if this falafel will make you feel as strongly as it made me feel, but it’s worth a shot, right?
Fangirls it has been a minute since I’ve been to my birth state, but last weekend I went up to NYC to hang out and see each other. Admittedly, it wasn’t nearly enough time, but we had a blast while we were there. Also, I’ve been to NYC numerous times as a child and teenager, but never spent much time there as an adult (it’s expensive as heck, man). So I’ve seen a good amount of NYC during the day, but getting to walk around at night was wonderful. One of the things that there are an overwhelming number of options with, is food. So I thought I’d share some of the food we ate!
Gotta eat ’em all ’cause he’s Danny Phantom.
Danny Phantom was a pretty rad show about a dude in high school who accidentally turned into a half ghost and he had to deal with his ghost hunter parents along with other teenage nonsense. It was a fun show, and awhile back someone suggested that I make something Danny Phantom themed for Nerds Gotta Eat. And here we are.
Fangirls, I struggled with these. Not the cakes themselves, but the frosting. I got incredibly frustrated and was so down on myself, but when I brought them in to work, they were a hit. I’m really glad I pushed through with this, because they were incredibly tasty, and reminiscent of one of my favorite Big Hero 6 characters, Honey Lemon!
I messed this recipes up in about 50 different ways, and it stressed me right the heck out because not cooking well does that to me. But I followed through and finished it, and we ended up with a pretty good meal!
I was a bit frustrated with the difficulty of the other Blue Apron recipe I tried last week, but this one was much easier! This casserole (though not quite as fancy as the one they show) was tasty and we got 4 servings out of it instead of 2. Let’s get cookin!
